STUFFED BREAST OF LAMB

Ingredients: -2 breasts of lamb, pork belly 100g-250g smoked ricotta -1 handful fresh spinach, 150g of breadcrumbs parsley sprigs -10 -1 egg -1 tsp chilli ' Espelette-pepper-olive oil Preparation: Soak the chicken in cold water while you prepare the stuffing. Cook the spinach washed in a pan with a drizzle of olive oil, then chop coarsely with a knife. Wash, dry and chop parsley. Mix ricotta with spinach, breadcrumbs, parsley, egg, pepper, salt, pepper. Turn the oven thermostat 7 and line a baking sheet with parchment paper. Soak chicken breasts, lay them flat, spread the smoked pork belly, salt, pepper and spread the stuffing on it. Roll them and keep them wrapped with kitchen string. Place on parchment paper, drizzle with the olive oil and cook about 30 minutes. Lower the oven 6 to halfway through. Serve chicken breasts cut into slices. Accompany with mashed vegetables and polenta.-------------------
