Alicante nougat

The nougat (Spanish nougat, torro in Catalan) is a Spanish candy made from honey, sugar, egg white and whole almonds or crushed. This is the Iberian nougat. Ingredients:-500g-150g almonds 250g sugar-honey -1 egg white Preheat oven to maximum temperature. Blanch the almonds and brown in the oven for a few minutes, ensuring that they do not burn. Pour sugar into small saucepan. Add 10cl of water and cook in syrup and stir thoroughly. When you get the color of caramel, remove from heat. In another saucepan, melt the honey (unless it has a very liquid honey). Stir in honey syrup and stir. Put the pan on the stove over low heat and continue cooking, stirring constantly. Beat the egg whites until stiff. Gently mix the syrup and add the almonds. Line a square pan with parchment paper. Pour the syrup over a thickness of 1.5 cm. Put the mold or refrigerator until the nougat hardens. To serve, cut small squares.
